Strawberries!

Ok, Sister Theresa...I'm Updating! ;o)

Well, at the beginning of this past week we went strawberry picking for the first time. The kids loved it and of course they each had to pick their own box full. Needless to say, I had 28 lbs. to take care of. After 2 days of washing berries, I gave away 7 lbs. to my mother-in-law, made 6 batches of freezer jam, 2 batches of fruit salsa and then pureed the rest for future sorbet. The kids actually want to go back but it's so much work doing all those berries!



Fruit Salsa
Recipe (from Tupperware)
12-16 oz. strawberries
2 kiwi
1 large Granny Smith Apple
1 T. Apple Jelly
1/2 lime, squeezed
1/2 tsp. Cinnamon Vanilla Spice (from Tupperware) or just Cinnamon

Cut all fruit into pieces. Put the apples in the Tupperware Quick Chef or use a Food Processor to chop about the same as hash browns. Then, add remaining ingredients chopping to desired consistency. (I didn't have apple jelly & it still tasted great)

Cinnamon Vanilla Chips
1 pkg. 6" flour tortillas
1/2 cup sugar
1 T Cinnamon Vanilla Spice (from Tupperware) or just Cinnamon
Pam Cooking Spray

Spray tortillas on both sides with Pam. Cut them into triangle 8ths and place in a large bowl that has a seal. Then add the sugar and cinnamon and seal your bowl. Shake gently until well coated. Bake these on cookie sheets in a single layer at 350* for 5-10 min. or until crispy - watch them closely depending on your oven! These are SOOO good with the fruit salsa or you can use van. waffers or gram. crackers ~ But the Cin. Chips are the Best!

Speaking of Tupperware...I'm having a party on Monday, June 26th if anyone wants to place an order, or if you need anything replaced or if you want to come and eat the goodies. We will be having the salsa and chips and a 7 min. cake in the microwave.

Tupperware? Like I cook enough to need to store something! I still think your homemade applesauce was the best ever. I bet you just love winter when there's nothing to pick, freeze or can!!!
